A Good Dip Or Spread For Sun-dried Tomato And Italian Cheese Bread?

Right now I’m making bread with sun-dried tomatoes and mixed italian cheeses in it… I was wondering if anyone has any good ideas for a sauce, dip, or spread for it?

Some good olive oil with a little Balsamic vinegar would do nicely.
Roasted Garlic
I say this in case you are unfamiliar with it, I don’t mean any offense:
When you roast garlic (wrapped in foil with a little olive oil) it takes on the consistancy of mashed potatoes. It spreads very easily and it is excellent on crusty bread with a little feta cheese.
It sounds made to order to go with your bread.
With your bread so ‘rich’ I think the best spread or dip would be just a bit of extra virgin olive oil in a small plate or bowl to dip the bread in. Even butter would be ‘too much’ but the light flavor of the e-v-o-o would bring out the flavors of the sun dried tomatoes and the Italian cheeses. You may also consider adding some fresh herbs … basil, oregano, or marjoram … to the oil. Enjoy!
put a garlic cream cheese spread on the side… a lot of times a cold dip for a hot food is great and if the bread will be cold the cream cheese spread will be awesome too
1 part sour cream, 1 part cream cheese, dill and garlic, delicious stuff.

mmm…An olive tapenade would be divine with that bread.
Or a fruity olive oil and balsamic.
