		<description>With your bread so &#039;rich&#039; I think the best spread or dip would be just a bit of extra virgin olive oil in a small plate or bowl to dip the bread in.  Even butter would be &#039;too much&#039; but the light flavor of the e-v-o-o would bring out the flavors of the sun dried tomatoes and the Italian cheeses.  You may also consider adding some fresh herbs ... basil, oregano, or marjoram ... to the oil.  Enjoy!</description>

When you roast garlic (wrapped in foil with a little olive oil) it takes on the consistancy of mashed potatoes.  It spreads very easily and it is excellent on crusty bread with a little feta cheese.
