Any cheese shop, or fine grocery store which stocks the many cheeses, will be able to make recommendations for a particular cheese, or recommend a cheese for the application you're interested in. Cheese.com is a great resource.

I love cheese too. Mostly I eat a little cracker with my cheeses. My favorite is St. Felicien. I love Roaring Forties Blue also. Some other great cheeses are Explorateur and Alsatian Munster. I like strongly flavored stinky cheese! We buy some olives and some dried apricots, maybe a salad and that is dinner some nights. So easy but a bit expensive to do very often.
I use Emmenthal, Appenzaller and a nice old Gruyere for fondue. The better the cheese, the better it will taste. However, you can add any harder cheeses and it will work well. Also, I combine all the leftover cheeses (all the little odds and ends) melted with some cream and garlic and combine with cooked gemelli. It's a great tasty meal!
