		<description>i agree with everyone, cottage cheese is the best, except, you&#039;re gonna wanna let the water drain off like in a mesh strainer.  also if you have a food processor, handy chopper type thing,  puree the cottage cheese so that it have the smooth texture of ricotta cheese.  good luck!!!!</description>

		<description>Cottage cheese is a good substitute in savory dishes like lasagna or stuffed pasta.  I think you will be really disappointed if you use it in sweet cannoli filling.  It&#039;s salty and the texture is a little too wet.  I think you really need ricotta for cannoli.</description>
