Can I substitute ricotta cheese for marscapone in a risotto recipe?

Filed in Category Ricotta Cheese

I know that marscapone is smoother, but the flavors are about the same and the cheese is meant to melt into the risotto anyway. I have ricotta cheese in my fridge along with everything else I need, so would it turn out all right?

Yes, no problem there. And ricotta is lower in fat too, an extra bonus.
    Hmmm, I’m feeling hungry now!

Yes. It probably won’t be as rich.
