Yes I actually prefer provolone myself. So I use provlone istead of swiss all the time, but just remember it will be a bit stringier when it is melted.
Oh noooo! If you hate Swiss cheese then you’ve never had a good Swiss. Try Emmenthaler Swiss. Provolone, especially a mild, domestic variety, would not be good in a gratin, IMHO. You could try a medium sharp cheddar (like a Colby or Jack), or even use a nice Gouda or goat cheese. If you’re going to use Provolone you might as well not use any cheese at all, just make scalloped potatoes with a little whole cream and onions.
You can use any cheese that you like for gratin. Try adding multiple cheeses. For a interesting touch, put a little blue cheese/gorgonzola. A touch of fancy. . . Just have fun with cooking. Recipes are only suggestions if you know your food.
