Wow, I've never known anyone besides my (ex) in-laws to know what quesadilla is! I have been making it a couple times a year for the past 22 years from the "secret" family recipe.
This is so easy, but this recipe makes a lot (2 pans) and you'll need to use a big mixing container. (I use my big food processor) If you half the recipe, it works great in just your blender.
Quesadilla (or as my friends call it - Salvadorean Cheescake)
2 Cups sour cream
2 cups cottage cheese
4 eggs
(whip together, then add the rest)
8 ounces butter
2 cups sugar
2 cups bisquick
pinch of baking powder
topping: sesame seeds
Whip 'til smooth. I pour in to a lightly greased big rectangular pyrex dish. I like the clear glass because you can see how it's cooking. Top with sesame seeds.
Oven at 350, start with the pan (s) on the middle shelf. Leave on that shelf until it starts to firm up, then move to the lower shelf. It seems it never takes the same amount of time to cook. I check at 30 minutes, then check every 15 minutes or so. It's done when it's firm all the way through, the sides are golden, and the top isn't sticky. Usually around 1 hour.
We then cut in squares and store wrapped in foil. At Christmas, I have given quesadilla as gifts.I cook it in disosabe pie pans and wrap them up with pretty cellophane. A batch will make 4 pie pans.
