Does Anyone Have Any Good (easy) Recipes That Call For Goat Cheese?

I love goat cheese but am not quite sure how to cook with it or use it. Any recipes or advice would be great. Thank you!

Shrimp with Lemon, Mint, and Goat Cheese
1 tablespoon olive oil
6 small garlic cloves, minced
2 1/4 pounds peeled and deveined large shrimp
1 cup frozen green peas, thawed
3/4 cup thinly sliced green onions
1/4 cup mirin sweet rice wine
2 tablespoons fresh lemon juice
1 teaspoon grated lemon rind
1/2 teaspoon salt
4 plum tomatoes, diced
1/2 cup chopped fresh mint
1/2 cup crumbled goat cheese
Heat oil in a large nonstick skillet over medium-high heat. Add garlic; sauté 1 minute or until browned. Add shrimp; cook 1 to 2 minutes, stirring constantly. Add peas and next 6 ingredients (through tomatoes); cook 8 minutes or until shrimp are done. Top each serving with 4 teaspoons mint and 4 teaspoons goat cheese.
Goat Cheese Quesadillas
1 8 ounce log of mild goat cheese
12 flour tortillas
2 tablespoons vegetable oil
1 large sweet onion, diced
1 large red pepper, diced
3 Honey Crisp apples, peeled, cored and diced
1 tablespoon fresh thyme, chopped
salt and pepper
Lay out 6 tortillas on a work surface and crumble the goat cheese over them evenly.
Heat the oil in a saute pan over medium high heat and add the onion. Cook, stirring often until the onion begins to soften. Add the pepper and apples and cook for about 5 minutes and then add the thyme and season with salt and pepper. Taste the mixture and adjust the seasonings if needed.Spoon the mixture onto the tortillas with the goat cheese and top with the remaining 6 tortillas.Cook the tortillas on a hot non-stick griddle until lightly browned and then flip and brown the other side. Slice each into 8 wedges and serve. Top with cherry salsa if desired.
When cutting goat cheese, a knife will quickly become covered with the cheese, making it difficult to cut clean, neat slices. Here’s how to avoid a sticky situation.
Slide an 18-inch piece of dental floss under a log of goat cheese. Cross the ends of the floss above the cheese and then pull the floss through the cheese to make slices. Move the floss and cut again to make slices of the desired thickness.

Goat Cheese Dip

Preparation Time: 10 Minutes
1 carton (8 ounces) sour cream
1/2 cup mayonnaise
1/4 cup crumbled goat cheese
1/4 cup half and half
1 teaspoon finely chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1. In bowl, combine all ingredients; mix until blended.
2. Cover and refrigerate at least 1 hour to allow flavors to blend. Serve with French-fried potatoes or roasted potato wedges. It also works with bread cubes and toasted bread fread slices.

you can make goat cheese pizza. Just by store bought pizza dough and any type of meat or veggies you like. put together and bake till cheese is melted. did you know they also make goat cheese ice cream? I’ve tried it, it tastes like normal ice cream but better for people who are lactose.
This is kind of a “make-your-own” appetizer idea.
You’ll need:
Avocado
Tomato
Cucumber
French Bread
Balsamic Vinegar
Olive Oil
Salt & Pepper
Goat Cheese
Dip slices of (good) French bread in mixture of balsamic vinegar and olive oil. Spread with a little goat cheese and top with veggies. Sprinkle with salt and pepper to taste. It sounds easy, but is SO GOOD! I suggest a nice white wine with it, too!
It really depends on what kind of goat cheese. I love brie baked in phyllo dough with some carmalized onions.
Also, most of it is really good with some crusty bread and apple slices.
Quesadilla- put goat cheese, red kidney beans and green chillies in a torilla, fold and pan fry. Yum.
