Does Anyone Have The Easy Philly Cream Cheese Recipe For Mini Cheesecakes?
Filed in Category Cheese Recipes
I used to have a real easy mini cheese cake recipe that you make in a muffin or cupcake pan using vanilla wafers as the bottom, some Philly cream cheese but can’t find it. Can anyone help or give me a good easy cheesecake recipe that doesn’t use a spring foam pan or take hours to make?

Your wish is my command.
I’ll give you 2…the first is more classic, and the second is no-bake…
***Mini Cheesecakes***
12 vanilla wafers
2 (8 ounce) packages Philadelphia cream cheese, softened
2 eggs
2 tablespoons lemon juice
2/3 cup white sugar
1 (21 ounce) can cherry pie filling
..DIRECTIONS
1.Preheat oven to 350 degrees F (175 degrees C).
2.Line muffin tins with 12 paper baking cups. Place a vanilla wafer in each one.
3.In a medium mixing bowl beat cream cheese until fluffy. Add eggs, lemon juice, and sugar. Beat until smooth and thoroughly combined.
4.Fill each baking cup 2/3 full with cream cheese mixture.
5.Bake in preheated oven for 15 to 17 minutes. Cool on a rack. Top with fruit pie filling. Pipe whipped cream or sweetened cream cheese into a rosette on top of each cheesecake just prior to serving, if desired.
***No-Bake Mini Cheesecakes***
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
12 OREO Cookies
multi-colored sprinkles (optional)
BEAT cream cheese and sugar until well blended. Gently stir in whipped topping.
PLACE cookies on bottom of 12 paper-lined muffin cups.
SPOON cream cheese mixture into muffin cups. Top with multi-colored sprinkles. Refrigerate until ready to serve.
I JUST MADE THESE! Wow, amazing. Alright then, here you go!
3 8oz blocks of cream cheese
3/4 cups of sugar
1 1/2 teaspoons of vanilla extract (don’t use imitation!)
3 eggs
Nilla wafers
Mix above until creamy.
Use aluminum cupcake holders. Put a nilla wafer (flat side facing up) on the bottom and then fill 3/4 full with the mix.
Bake at 350 degrees F for 10-12 minutes or until the middle is firm.
Top with any topping you like (my favorite is chocolate chips or strawberries with sugar).
