I am looking for a recipe for Feta Cheese Pizza but which does not have a tomato sauce base but more of an olive oil based one. Anyone know of a good one?

GREEK PIZZA WITH SPINACH, FETA CHEESE, AND ROSEMARY
1 tablespoon extra virgin olive oil
    • 1/2 medium-size red onion, thinly sliced
    • Salt and pepper
    • 2 garlic cloves, finely chopped
    • 1 large bunch of spinach, stems removed and leaves washed, 8 to 10 cups
    • 1 teaspoon minced lemon zest
    • Pizza Dough, ready to rollout
    • Garlic Oil
    • 6 Kalamata olives, pitted and coarsely chopped
    • 3 ounces feta cheese, crumbled, about 1 1/2 cups
    • 1/4 pound mozzarella cheese, grated, about 1 1/2 cups
    • 1/2 ounce Parmesan cheese, grated, about 3 tablespoons
    • 1 teaspoon chopped fresh rosemary
Heat 2 teaspoons of the olive oil in a saute pan. Add the red onion, 1/4 teaspoon salt, and a few pinches of pepper; saute over medium heat for 4 to 5 minutes, until tender. Add half of the garlic and saute for i minute. Transfer to a bowl.
Heat the remaining teaspoon of olive oil in the pan. Wilt the spinach over high heat with 1/4 teaspoon salt, a few pinches of pepper, and the remaining garlic. When the spinach is wilted but still bright green, in about i minute, remove it from the pan and place it in a strainer to cool. Squeeze out the excess moisture with your hands, then coarsely chop and toss with the lemon zest.
    Preheat oven to 500°F.
Roll out the dough and place it on a lightly oiled pizza pan or well-floured wooden peel; brush with the Garlic Oil. Spread the onion on the dough, followed by the spinach. Sprinkle the olives over the spinach, follow with the crumbled feta, then add the mozzarella cheese.
Bake the pizza, in the pan or on a preheated pizza stone, for 8 to 12 minutes, until the crust is golden and crisp.
Remove it from the oven and sprinkle with the Parmesan cheese and fresh rosemary.

Hi! Yum I love making pizzas at home. I think you’ll have some success with this one. If you don’t want the tomatoes- I would just omit them.
3 tablespoons olive or vegetable oil
    1/8 teaspoon salt
    6 drops red pepper sauce
    1 clove garlic, finely chopped
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
3 green onions, sliced (3 tablespoons)
2 medium tomatoes, seeded, coarsely chopped (1 1/2 cups)
1/3 package (48-oz size) frozen pizza dough & Italian bread (1 loaf), thawed
1 cup shredded mozzarella cheese (4 oz)
1/2 cup crumbled feta cheese (2 oz)
10 kalamata olives, cut in half, pitted
    1. In small bowl, mix oil, salt, pepper sauce and garlic; reserve 1 tablespoon. To remaining oil mixture, add basil, onions and tomatoes; toss. Cover; let stand at room temperature 30 minutes.
    2. Heat gas or charcoal grill. Divide dough in half. On floured surface, roll each half into 8-inch round. Place dough rounds on grill over medium heat. Cover grill; cook 1 to 2 minutes or until bottoms of crusts begin to brown.
    3. Remove crusts from grill, and place browned sides up on ungreased cookie sheet. Brush reserved oil mixture evenly over crusts. Top with tomato mixture, cheeses and olives.
    4. Slide pizzas from cookie sheet onto grill. Cover grill; cook 2 to 4 minutes or until bottoms of crusts are brown and cheese is melted. (If crusts brown too quickly, place a piece of foil between crusts and grill.)http://www.bettycrocker.com/recipes/reci…

You can buy alfredo sauce in a jar which tastes super with spinach. If you dont like that flavor then a thin layer of ricotta cheese with a lot of black pepper works extremely well. If neither of those work, then just drizzle olive oil, salt, pepper, thyme, oregano and par back the pizza crust. Then add spinach, feta cheese, red onions and bake until desired crust color. Yummalicious!

Pesto sauce, feta cheese, Greek olives, and fresh basil leaves is your basic Greek pizza (BTW – pizza was originally Greek and the Italians didn’t pick up on it until the late 1800s).

A good substitute would be a basic Basil Pesto in place of Tomato based Pizza Sauce.
Give that a whirl and see what you think.
    Eat well and enjoy!
