Does processed Parmesan cheese expire after two weeks of opening?

Filed in Category Parmesan Cheese

I opened a package of generic Parmesan cheese over 2 weeks ago (about 3 and a half). I ate some (like 4 tablespoons) today. The package says for all packaged cheese to eat within 2 weeks of opening. I know that Parmesan cheese lasts a long time because of all of the preservatives and the cultures. Is it bad that I ate some Parmesan cheese that was not expired but exposed to some air for more than 2 weeks? Thank you for your time.

no it’s still good unless you see mold. they have to put that on the package.

You’re right, there are enough preservatives in the canisters of grated parmesan cheese to keep it good for more than the recommended 2 weeks. If you refrigerate it, it will keep for about two months, and if you keep it in the cabinet, it will be good for maybe a month. Exposing it to air will only affect the dryness and texture.

I think the real issue is flavor, it definitely doesn’t taste as good if it is too old or not stored properly, but it won’t make a healthy person sick.
