This recipe is medium spiciness. For mild, omit the jalapeno peppers and crushed red pepper.
1-lb cooked elbow macaroni (cooked 2 minutes less than al dente)
1-lb sharp cheddar cheese, shredded
2 cups milk
2 tbs all-purpose flour
2 tbs. olive oil
2 pickled Jalapeno peppers, chopped
1 tbs. Mexican chili powder
2 tbs. Worchestershire sauce
2 cloves garlic, chopped fine
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. crushed red pepper
Heat oil in a 4-qt pan on medium heat. Add the flour and stir until smooth. Add the &lt;a href=&quot;http://www.curdsnwhey.com/cheese-milk/&quot;&gt;milk&lt;/a&gt; and stir until thickened. Add everything except the cheese and macaroni and stir to mix well.  Gradually add the cheese while stirring. When smooth, adjust seasoning, then blend in the macaroni. Preheat oven to 375 degrees. Cook macaroni in boiling salted water in large saucepan just until tender, about 8 minutes. Drain and rinse under cold water.
Meanwhile, melt 2 tablespoons butter in large saucepan over medium heat. Stir in flour and cook, stirring 1 minute. Gradually whisk in milk, mustard, salt and peppers. Bring to boil, whisking. Boil 1 minute. Remove from heat and whip in cheeses until melted and smooth. Stir in drained macaroni. Pour into shallow 2 quart baking dish. Melt remaining 2 tablespoons butter, stir in bread crumbs and sprinkle over macaroni. Bake 30 minutes. Let stand 10 minutes.

1 (12-ounce) container small-curd cottage cheese
2 large eggs, lightly beaten
1 teaspoon salt
1/2 cup dry breadcrumbs
1 teaspoon Greek seasoning
Cook pasta according to package directions; drain.
Melt butter in a Dutch oven over low heat; whisk in flour until smooth. Cook 1 minute, whisking constantly. Gradually whisk in milk; cook over medium heat, whisking constantly, until mixture is thickened and bubbly. Stir in 2 cups Cheddar cheese and next 3 ingredients. Stir in pasta.
Spoon mixture into a lightly greased 13- x 9-inch baking dish. Top with remaining 1 cup Cheddar cheese. Combine breadcrumbs and Greek seasoning; sprinkle over cheese.
Bake at 350° for 25 minutes.
