HELP!! I need really easy recipes for cup day?
Filed in Category Cheese Recipes
I am having a BBQ for cup day. We are having about 12 people over. So far i have planned the usual nibblies… chips, dips, cheese & Kabana. If anyone has some easy finger food recipes.. I really suck at thinking up what to have. Not a great imagination you could say. A friend is doing a platter with some olives, sundried tomato’s etc. I am kind of stressing that i am not going to have the “right” stuff. Some of the peeple coming are my partners friends and i need to make a good impression

Take a deep breath and calm down, don’t stress or you will get yourself all flustered. I have no idea what cup day is, never heard of it!!!
Easy finger foods could be things like rolls and bread, offer different fillings, a selection of cold meats, cheese, salad and people can build their own sandwich. If you are doing a BBQ then you could make your own burgers with some minced beef or lamb, finely chopped onions, salt and pepper and some fresh herbs. Chicken is great on a BBQ, marinade over night and grill til cooked through. a salad of sliced mozzarella cheese, sliced ripe tomatoes and basil is easy and simple to make, just layer the sliced cheese and tomato, drizzle with olive oil then tear some fresh basil over the top. Coleslaw is really easy to make as well, I use shredded red and white cabbage, very finely sliced onion and grated carrot, mix a little sweet chili sauce in with the mayonnaise, it adds a different taste. Pasta and rice can also make great salads, mix in whatever you fancy, I use peppers, nuts, dried fruits.
yes easy platters of cold meat look really great if you roll sliced meats. cold pieces of bbq chicken as well. cold garlic bread doesnt sound good not ordinary stuff you buy from supermarket but more so a foccacia with butter and garlic, cut in triangle shapes with a bit of parsley to make it look good. also gourmet pies pasties, samosas are quick and easy from the supermarket. platters are the way to go, fruit platter of what is in season, and toss salads. but no need to go overboard, if you find it all too hard, local supermarkets should be able to make some platters that arent that dear, and take all the stress out of it. for $80-00 it would feed all of you and wouldnt have to do anything
well have fun and hope you back a winner
Talk about leaving things to the last minute! ;oD
Buy a couple of loaves of fresh bread and rip them up. Have bowls of olive oil and vingegar for dipping to go with them. If you can afford it, buy some flavoured olive oils like tarragon, garlic, lemon, basil..avocado oil is to die for!
For finger food, make up platters of sliced fresh raw vegetables (cucumber, carrots, celery, sugar peas etc.). Have bowls of flavoured sour cream to go with them. The sour cream can be flavoured with sweet chilli sauce, or onion soup, or dry seafood soup mix & tinned shrimp.
Load a plate with dry crackers, & add a block of cream cheese that you’ve poured sweet chilli sauce all over.
Throw some basil or cilantro pesto into a bowl and place a load of pretzels or some other kind of ‘sticks’ next to the bowls for dipping.
Bowls of macadamia or cashew nuts are good. Bowls of olives. Bowls of cubed feta cheese too!
For your barbeque, you should go for chicken wings, sausages .. and if you have time, kebabs.
All good for fingers!
Grab some capsicums, halve & clean them, toss them in a mixture of port, olive oil, garlic, and basil..and bake then for 30-minutes. It’s easy to grab half a capsicum & chew on it.
Have a plate of savoury cheeses and crackers for after dinner. Add fruit like grapes.
If you can find the time..grab some pastry sheets and a block of chocolate from the supermarket. Slice the pastry sheets into 3 strips, place 2 or 3 squares of chocolate onto each strip and wrap. Glaze with milk, top with sugar crystals, and bake until the pastry browns. Best served warm, but still a winner when cold.
Contact me a couple of days earlier next time, and I’ll talk you through a sushi night!
Good luck Blossom!
