I am pretty sure that it is naturally but to put holes in cheese you would probably need a special tool.
naturally occuring thrwough the fermentation and turning process.
The holes form as a result of the gases that are released during the making of the cheese.
Cheese is catalyzed milk (from rennet) and often also fermented. Swiss Cheese has a bacteria in it called Propionibacteria Shermanii. This bacteria eats lactic acid and outputs CO2. Much in the same way a yeast would. The result is bubbles of CO2 trapped which when sliced makes holes.
Like person above said, bacteria!!!!!!!!!!!!!
