How Do You Know When Feta Cheese Has Gone Bad?

I am a former chef and feta does have a pungent aroma, when it goes sour or bad the brine will become slimey and and darken, the cheese will crumble when picked up.
The best is Bulgarian feta, it is creamier and less salty, I like Greek and the Canadian is also good, but I am partial to goat milk feta, if it is off or depending on how long you have had it, it lasts in its original brine/liquid for 2-3 weeks, if it is new it can be rinse and put back in a salt water solution, just dissolve a tablespoon of salt in a cup of warm water,and place the cheese in it and put in back in the frig, if you bought it dry just wrap it in plastic wrap and put it in a air tight container or jar.
It starts drinking, using drugs,sneaking out of the house in the middle of the night, & dating “bad boys”.
I don’t know exactly when it goes back but I keep mine in the brine up to 6 weeks in the refrigerator and it’s fine. Sometimes it only lasts 2 meals. Depends on what the menu is.

It does smell strong, but it’s a great cheese.
I’ve never had any go bad on me, but then it only lasts about a week in the fridge before it’s all gone. From what I’ve heard though the brine darkens and the cheese gets all slimey.
