Actually, cheese tastes much better at room temperature, so leaving the portion of cheese that you intend to eat right away out at room temperature for 30 minutes, or until it no longer feels cold, would be fine. When serving blocks of cheese with crackers for a party, I always put the cheeses out on a platter at least an hour before the party so that the chill comes off and the cheese is more flavorful. This should be done in a reasonably cool room, and not in hot or humid weather. Just remember to cover the cheese so the surface does not get dry or sweaty. The principle behind this is that the fat in the cheese softens and coats your tongue, allowing you to taste more than if it were cold. You’ll be surprised how delicious the cheese is.

The individual wrapped,, I imagine a few days because the air can’t get to it
But I have found that with the other plastic zip lock bags the slices become sticky together. even overnight.
    Unsafe???
Unless you see pasteurized The culture will form its mold even in the fridge. Unsafe I don’t think so
the blue in blue cheese is the culture..??

I would say no longer than 10 minutes, or it will start to get warm. You definitely want to put it up before it’s not cold anymore!
