How To Make Goat Cheese.?

I have been unsuccessful in making goat cheese. I cannot find a specific amount of lemon juice to use in any recipe. And, how long do I stir it? The more I stir it, the runnier it is and I thought maybe I wasn’t stirring it enough? The amount of curds I get are just a few tablespoons-if that from almost a gallong of milk. I must be doing something wrong. Can anyone help me?
