I Have A Lot Of Feta Cheese, Any Good Recipes?

I would love to make the Greek cheese pie, but any good recipes with feta cheese would be good. I am allergic to bell peppers so please no recipes with peppers!

    Feta Cheese Foldovers
    12 servings
    INGREDIENTS
    * 3 tablespoons thinly sliced green onion
    * 8 ounces feta cheese
    * 1 egg
    * 1 (17.5 ounce) package frozen puff pastry, thawed
    * 1 egg yolk
    DIRECTIONS
    1. In a small bowl, beat egg yolk with 1 teaspoon water.
    2. Crumble cheese, and blend with green onions and egg.
    3. Cut pastry into twelve 3 inch squares. Place a mounded tablespoon of filling in the center of each square. Moisten edges with water, and fold pastry over filling to form a triangle. Press edges together firmly with a fork to seal. Brush tops lightly with egg mixture. Cover, and chill until ready to bake.
    4. Bake at 375 degrees F (190 degrees) for 20 minutes, or until golden brown. Serve warm, or at room temperature.

    Barley rusks with olive oil is the easiest one (I prefer spanakopita, spinach pie but its more difficult)
    4 barley rusks
    8 Tbsp extra virgin olive oil
    2 large ripe tomatoes, deseeded and cut in small cubes
    1 cup hard feta cheese, grated
    salt
    Moisten the rusks with cold water. Drizzle the olive oil over the top and let the rusks absorb it. Salt according to taste. Be especially careful if feta cheese is salty. Arrange the tomato cubes on the rusks. Sprinkle with grated feta cheese and serve.

    Spinach
    Chopped green apple
    Choppen red onion
    Candied Walnuts
    Feta
    Poppyseed salad dressing (I like Marie Calendar’s and Kraft’s)
    Another really good one is Feta and Spinach Omelets…
    cook an omelet like you normally would, and fill it with fresh spinach and feta cheese. this is especially good serve with salsa verde.
    i also love feta on pizza.
    you can also use feta in place of ricotta in your favorite lasagna recipe…or at least go half and half.

    Greek salad!!!!
    2 smallTomatoes, chopped
    1 Cucumber, chopped
    Kalamata olives, about 1/4 cup
    1 medium Red onion, chopped
    Feta cheese, about 1/4 cup
    Olive oil
    Red wine vinegar
    Mix all the ingredients and dress with the olive oil and vinegar to taste.
    Enjoy!!!

    Make a simple salad of baby spinach leaves, red onion slices, fresh raspberries, sliced almonds and feta cheese. Dress with a raspberry vinagrette (and croutons if desired).

    Easy Feta Chicken Bake
    6, boneless, skinless chicken breasts
    2 T. lemon juice
    1/4 t. salt
    1/4 t. pepper
    1 c. crumbled feta cheese
    1/4 c. fresh parsley
    Preheat oven to 350 F. Arrange chicken in shallow baking dish.
    Drizzle with 1 T. lemon juice. Season with salt and pepper. Top with feta; drizzle with remaining 1 T. lemon juice. Bake 35-40 minutes. Sprinkle with parsley.

    Fry up some lamb chops….fresh from the grocery store.
    Get some spinach or any leafy green
    Put the lamb chops on a plate. spread leafy greens on it.
    Sprinkle feta cheese on top and enjoy.
    If you want you can broil for 3-5 minutes.
    You can also get some Naan (indian) bread and eat it with it.

    GREEK SPINACH PIE
    7 – 8 cups blanched spinach
    1 medium onion
    1/2 pound butter
    6 large eggs
    2 lbs ricotta or cottage cheese
    1/2 – 1 lb crumbled feta cheese
    Salt and freshly ground pepper
    1/2 lb filo dough (if frozen, thaw to room temperature)
    Chop spinach and dice onion. Melt 2 Tablespoons butter in a large frying pan and saute onions until soft. Add spinach, then turn up heat and cook until all moisture is gone. Remove mixture from heat. Melt remaining butter in a small pan.
    Beat eggs and mix in cheeses. Add spinach mixture; season with salt and pepper. Carefully spread the filo dough out flat and cover with a moistened dish towel so that the separate sheets don’t become brittle.
    Butter a 13 x 9 inch baking pan and place a sheet of the dough on the bottom of the pan. Brush lightly with melted butter and continue layering sheets of dough, buttering each sheet until you have a stack of 10. The dough should just fit the pan.
    If it doesn’t tuck in any excess dough, it doesn’t have to be terribly neat. Spread the spinach mixture evenly on top and stack with another 10 sheets of dough, buttering them as before.
    Bake in a preheated 375 degree oven for 15 minutes; turn oven down to 350 degrees for an additional 30 minutes. If the top layer begins to get too dark, cover with brown paper.
    Remove from oven and let rest for 15 minutes before cutting.
    Greek Chicken Pasta
    “This pasta dish incorporates some of the flavors of Greece. It makes a wonderfully complete and satisfying meal. For extra flavor, toss in a few kalamata olives.”
    Original recipe yield:
    6 servings
    INGREDIENTS
    1 pound uncooked pasta
    1 tablespoon olive oil
    2 cloves garlic, crushed
    1/2 cup chopped red onion
    1 pound skinless, boneless chicken breast meat – cut into bite-size pieces
    1 (14 ounce) can marinated artichoke hearts, drained and chopped
    1 large tomato, chopped
    1/2 cup crumbled feta cheese
    3 tablespoons chopped fresh parsley
    2 tablespoons lemon juice
    2 teaspoons dried oregano
    salt and pepper to taste
    2 lemons, wedged, for garnish
    DIRECTIONS
    Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
    Meanwhile, heat olive oil in a large skillet over medium-high heat. Add garlic and onion, and saute for 2 minutes. Stir in the chicken. Cook, stirring occasionally, until chicken is no longer pink and the juices run clear, about 5 to 6 minutes.
    Reduce heat to medium-low, and add the artichoke hearts, tomato, feta cheese, parsley, lemon juice, oregano and cooked pasta. Stir until heated through, about 2 to 3 minutes. Remove from heat, season to taste with salt and pepper, and garnish with lemon wedges.

    INGREDIENTS:
    3/4 cup crumbled feta cheese
    3 1/2 cups all-purpose flour, divided
    1 tablespoon sugar
    1 (.25 ounce) package yeast
    1 teaspoon salt
    3/4 cup milk
    1/4 cup water
    1 tablespoon olive or vegetable oil
    1/4 cup sliced pitted ripe olives, drained
    DIRECTIONS:
    Heat oven to 375 degrees F. If feta cheese is packed in brine, drain well and pat dry; set aside.
    In large bowl, combine 1 1/2 cups flour, sugar, undissolved yeast and salt. Heat milk, water and oil until very warm (120 degrees to 130 degrees F); stir into dry ingredients. Stir in cheese, olives and enough remaining flour to form a soft dough. Knead on lightly floured surface until smooth and elastic, about 4 to 6 minutes. Cover; let rest 10 minutes. Roll dough to 12- x 8-inch rectangle. Beginning at short end, roll up tightly. Pinch seam and ends to seal. Place, seam side down, in greased 9- x 5-inch loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 to 45 minutes.
    Bake for 30 to 35 minutes or until done. Remove from pan; cool on wire rack.

    SPANAKOPITA (SPINACH PIE)
    2 lb. fresh spinach, finely chopped
    3 bunches spring onions
    4 tbsp. butter
    6 eggs, slightly beaten
    1 lb. feta cheese, crumbled
    1/4 lb. butter, melted
    1 tbsp. dry mint
    Salt & pepper to taste
    1/2 lb. butter for filo
    20 sheets filo pastry
    Wash spinach thoroughly, chop fine and let drain for several hours. It is very important that spinach be left to drain completely. Saute onions in the 4 tablespoons butter.
    Mix beaten eggs with feta cheese, melted butter and mint. Add onions, salt and pepper. Line a 15 x 11 x 2 inch greased pan with half of filo sheets, brushing with melted butter (each sheet). Continue this until 1/2 of filo has been used.
    Place cheese and spinach mixture over the filo and then cover with remaining half of sheets, brushing with melted butter again. Roll and tuck all the filo around the inside edges of pan. Lightly score top of spanakopita into squares and bake at 350 degrees for 55-60 minutes.
