Well, the French are big on cheeses but normally not the low-fat kind! Haha! I used to do the South Beach Diet, and parmesan and feta cheese were really common. Really, you should try to limit your dairy intake except for 1-2% milk (not skim) and probiotic yogurts. Cheeses are normally high in fat and cholesterol and really shouldn’t be a major part of your daily dairy requirements.

Are you using the cheese to cook with or just to eat? If you’re just enjoying some cheese, stick with goat cheese but keep it to a minimum as it is not waist-friendly.

Typically, the harder the cheese, the lower the lactose and fat content.

Tomme de Savoie, Cantal (a hard cheese), and Capricette (made from goat’s milk) are all lower in fat than other cheeses.

most white cheeses are low in fat for example ricitta, cottage cheese, bocconcini and fetta cheese so if it is white go for it

smansier, all cheeses are white, it comes from milk and milk is white. the only reason cheddar and other cheeses are orange or yellow is because they dye it that way. the color of the cheese has nothing to do with the fat content

Don’t try to diet while in Europe or on any vacation.

You will start off with the best intentions, but they will go straight to Hades!

Enjoy all of the cheeses and sauces with no regret.
