This is a recipe that I actually use:
    PEAR AND BLUE CHEESE SALAD
    DRESSING:
    1/3 cup olive oil
    1 1/2 tablespoons balsamic vinegar
    1 tablespoon Dijon style mustard
    4 teaspoons honey
    1/4 teaspoon salt
    SALAD:
1 (10 ounce) bag of mixed salad greens
    2 pears, peeled and diced
    4 ounces crumbled blue cheese
    1/2 cup chopped pecans
Place all dressing ingredients in a small bowl. Whisk together until combined. Place salad greens in bowls or plates. Top with diced pear and blue cheese. Top with salad dressing. (I prefer to toss it all together in one large bowl before serving.)
    Yield: 4 to 6 servings

BC crumbles in a salad are the BEST! Try adding:
    salad greens
    BC crumbles
    tomato
    toasted walnuts or almonds
pear or apple chunks (toss in lemon juice to prevent browning)
    Craisins
I like the above w/ a simple vinaigrette, rather than a heavy BC dressing.
    Basic VINAIGRETTE
    1½ tablespoons Dijon mustard
    ¼ cup vinegar of choice
    ¼ cup good olive oil
    3/4 teaspoon kosher salt
½ teaspoon freshly ground black pepper
Whisk together the mustard, vinegar, olive oil, salt, and pepper to make a vinaigrette.

Walnuts is the most common partner but I’m allergic to this so I’d use Pine Nuts (which are really seeds). Blue cheese is quite strong and an acquired taste. If you’re making it for other people, you might be safer sticking to a milder cheese or Feta (which is nice with grilled peppers or olives).

Tomatos, dark greens, bacon, cucumber, – anything you would put in a regular salad. I like blue cheese. If you didn’t like blue cheese it would be kind of gross in a salad. Also, blue cheese dressing on that salad. And some croutons.

I love blue cheese! I put it on any of my green salads with any vegetables. I like hard boiled egg or bacon bits, sesame seeds, Cobb salad specifically has blue cheese in it, that is one of my favorites.

Use red and green leaf lettuce and also add walnuts, dried cherries, and red onions with a light raspberry vinegarette. Delicious!

Lots of people love Blue Cheese, but, personally, I can’t stand it:) ……crumbled bacon bits (REAL bacon) are good with it though
