    The best blue cheese comes from Italy, it’s Dolcelatte. However, parmesan is great with anything.

    I confirm the suggestion above: “Gorgonzola” is the best choice.
    Provolone, Mozzarella and Parmigiano are completely different.

    Gorgonzola is expensive and in any case too good to use for a dip. Go for the blue cheese because I’m sure that is what the restaurants use.

    gorgonzola… why do you need italian cheese?
