Mac And Cheese Recipe For A 12 Month Old?

What would be a simple mac and cheese recipe for a 12 month old? I know this sounds like s tupid question but I tried shredding some cheddar cheese on top of cooked macaroni and the cheese became hard and lumpy, I want it to become soft and blend with the macaroni?
What type of cheese should I use? Like those orange sliced cheeses?

Cheddar is fine, but you need to make a cheese sauce, not just put cheese on top. You make a roux with 2 tbsp butter/margarine and 2 tbsp all-purpose flour. Melt the butter in a frying pan, and then add the flour. Whisk for about a minute, then whisk in about 2 cups of whole milk. When that comes to a bubble, whisk in about 2-3 cups grated cheddar cheese. It’ll thicken as it goes. Pour some over the macaroni and mix it up…let it cool first, as cheese sauce is quite hot and retains that heat for a while.
Oh – addition – if you want to make it a bit less rich, you can use 1 cup of whole milk, 1 cup of chicken broth instead.

*lol* The first answer is right about starting with a roux. If you make a large amount and freeze it in ice-cube trays it will save you time.
Or if you want to cheat you can start with a canned cream soup (any flavour) -find a healthy one without MSG though.
Also remember if you boil the milk it will separate again.
