I understand that the cheese used in a classic Philly Cheese Steak is Provolone. I don’t know if this is an American Cheese, it has sort of an Italian sounding name, but I haven’t come accross it anywhere else. It was certainly the cheese used on the only Philly Cheese Steak sandwich I have ever eaten, and that was in Washington DC.
One of the first cheeses to originate in the US was brick cheese. There are a lot of new varieties being made now but I don’t think you can say they are American originals. A type of blue/bleu cheese is a variation as good as it may be. Colby and pepperjack are very American, and the muenster made here is nothing like the European by the same name. Cream cheese is also an American innovation.
Tillamook–a good American cheddar made in Oregon originally and still the gold standard for this kind. Since America was populated by people from every corner of the world, most of the cheeses are knock-offs from other countries…don’t think the Indian tribes did much with cheesemaking. Hard to milk a running buffalo, right?
