What Can I Use To Substitute For Blue Cheese?

I have a recipe for Macaroni and Cheese that I want to make but it has Blue Cheese (which I hate) in it and I want to replace it with another cheese. This recipe also has Gruyere and Extra Sharp Cheese in it. Any suggestions for a third cheese to use?

Since gruyere would have a nutty Swiss flavor and the sharp cheddar would be tangy, I would recommend a mild gouda or jack cheese (jack melts really well, too).
I have used cream cheese. you just gotta get it real smooth and pourable so you can mix it evenly through out the rest of ingredients. i swear it was good. it made it so creamy.
i would start with smoked gouda or herb gouda (i live 30 minutes from a gouda factory)
you could also go with American, Velveta, or feta. Feta does not melt as nicely as the others though.
I believe that you should just leave the blue cheese out.
Personally, there is nothing on this earth that can subsitute the wonderful taste.
You can never go wrong with monterey jack cheese.
I use feta to sub out for blue cheese as I also just hate it.
Feta is very very salty so just keep that in mind and taste before adding any additional salt.

How about a Colby Jack because it melts so beautifully?
I would use smoked Gouda.
How about Parmesan Cheese? Sometimes when I make Mac & Cheese, I’ll add this just for a change up. Yummm
