    Fontina has a mild, somewhat nutty flavor, while rich, herbaceous and fruity. It melts well. It can be substituted with: Gruyère, Emmental, Beaufort, Taleggio, Edam, or Gouda.

    Like you will have any of those….use mozzarella with a bit of parmesan
