There are many recipes you can find to make your own, and add more cream, buttermilk, mayo, and/or sour cream to make it creamier and less strong; then it doesn&#039;t really matter what type of blue cheese you use.  For eating, as in a nice &lt;a href=&quot;http://www.curdsnwhey.com/gormet-cheese/&quot;&gt;gourmet&lt;/a&gt; blue cheese, try Saga Blue.  Creamy and mild.  And Cambezola is great too.</description>
