Mmm, sharp provolone, I could eat chunks of that all day. Also good on crackers.

Mozzarella – tho’ layered with slices of ripe tomato, then drizzled with goood olive oil, and a few leaves of fresh basil is even better! .. but then it’s not on it own .. Ah well! Having some anyway!!
Gorgonzola – oh yes! Even better on the tip of a cellery-stalk or a slice of slightly tough, crusty italian bread.
Primadonna .. mmm! Just a bit softer, and milder than parmesan (which is not called Parmigiano regiano, that’s the name of the region …)

I would have to say mozzerella and provalone. They taste good with or without bread.

Mozzarella, provalone, and Parmesan are very good all on there own w/ some great italian bread on the side. Feta is greek.

Feta is Greek cheese and Gouda is Dutch.
As for italian cheeses, I love a chunk of parmesan with 15 year old balsamic drizzled on…it’s like dessert. Fontina is also nice if you like something smooth with more flavour than mozzarella.
Smoked provolone is widely available and has an almost ham taste to it not unlike smoked gouda.
If you prefer a stronger taste, Gorgonzola is a lovely blue cheese from Italy but my favourite, which you wasn’t available in the US for a long time due to problems with the producer’s export licence is called Testun al Barolo which is a goat’s or sheep’s milk cheese (depending on what’s available) that is aged in the must of Nebbiolo grapes that have been pressed to make Barolo, an Italian red wine.
