What Kinds Of Cheese Should I Use For A Cheese/bread Platter?

I am having a house warming party this weekend and wanted to put together a cheese and cracker/bread platter. Any recommendations for types of cheese? Maybe gouda, brie..?

    A cheese board should contain at least 1 soft, semi-soft, 1 mature, 1 cheddar
    Cambembert
    Brie
    Blue stilton
    gouda
    mature irish cheddar cheese
    Serve with grapes, apple and water biscuits like Carrs.

    Add Port Wine Cheese to your other choices as well as White Cheddar, Pepper Jack
    slices of apples , red, yellow, green (drizzle lemon on them).
    Olive tempenade for Crostini is good too.

    I agree with Zippy. I just recently tried Dill Havarti cheese and fell in love. It’s delicious. So maybe I would add that – LOL.
