Make an italian layered dip with a layer of goat cheese, then a layer of pesto, and then a layer of sundried tomatoes. You could even mixed all of these together if you wanted.
Or make an artichoke goat cheese spread. Mix goat cheese with canned or jarred artichoke hearts, olive oil, a little lemon juice, lemon zest, minced garlic, roasted red pepper, herbs such as parsley, chives, and basil, salt, pepper, and red pepper flakes.

Well, the ULTIMATE would be caviar. But I'm guessing that your budget (like mine) wouldn't allow for that! So, you can use any of the following:
* pine nuts
* thinly sliced radishes
* thinly sliced prosciutto
* thinly sliced smoked salmon
* sliced Greek olives
* finely chopped roasted red peppers
* pralines (sugar coated pecans) sounds kind of weird, I know, but trust me on this one....a great combo with goat cheese
* slices of fresh unpeeled pear
* fresh figs, sliced
* chilled, poached shrimp
* small, slices of roma tomato
Also, try and buy the "fancy" crackers. They're not much more expensive, and look so pretty. Try to offer a selection of different toppings. Think different colors, textures, and tastes.
