What’s A Good But Simple Mac & Cheese Recipe?

Filed in Category Cheese Recipes

I will resort to box mac & cheese only as a last resort, i.e. I end up burning the house down because I tried it from scratch. :P
But seriously, what’s your favorite mac & cheese recipe? I need something quick and easy but just as tasty. Ha!
Thanks in advance!

Instead of using butter, just use a can of tuna and dump in the powdered cheese. Stir in some dehydrated onions if you’ve got them lying around. Maybe a dash of garlic too.
    it’s semi-healthy and doesn’t get any simpler. :-P
A thumbs down for a simple tuna mac recipe? Really people?!?!? LOL It’s not like I said stir it with a tampon or something. Sheesh!

While cooking your macaroni, or shells, cube velveeta cheese, how much depends on how cheesey you like it and how much pasta you have, place cheese in microwaveable bowl, add about a 1/4 cup milk, I never measure so I’m guessing, 1 tablespoon butter, and I usually add some shredded cheddar, and colby, monterey jack. Place the bowl covered with a paper towel in the microwave for about 4minutes, checking after 2 minutes and stirring. Once the cheese has melted, and the pasta has finished cooking, drain the pasta and add the cheese, mixing througly with spoon. It taste wonderful, and it’s quick and easy, way better than any box! Hope you like it.

    Macaroni & Cheese (answer)
1 sm. box large elbow macaroni (1 lb)
    1 tall can evaporated milk
1 (8 oz.) pkg. sharp cheese
1 (8 oz.) pkg. mild cheese
    2 eggs, beaten
    1/2 stick butter
    Black pepper to taste
    Salt to taste
Cook the macaroni until nearly done in salted water and drain. Mix grated cheese, butter, pepper, canned milk, and cooked macaroni. Add beaten eggs. Pour into a long casserole (9×13).
If not enough liquid, add whole milk until all macaroni is covered, making sure all macaroni ends are turned down. Sprinkle top of casserole with grated cheese, paprika, and/or pepper if desired. Bake at 375 degrees for 40-45 minutes.

I use two cans of evaporated milk, 3 eggs, 4 cups of cheese.
Pull out dish and sprinkle with extra cheese about 10 min. before done

For stove-top M&C these recipes are fine. Personally I start with a roux (butter and flour simmered VERY gently), slowly add the milk, put in chicken bullion and Tobasco sauce, some preferred spices (like onion powder, a bay leaf), simmer for 5 min add the cheese and then temper (TEMPERING The technique used to blend uncooked eggs into hot mixtures. Eggs are beaten and a little of the hot mixture is stirred into them to warm (temper) them, The warmed eggs are then stirred into the remaining hot mixture. Tempering helps to prevent the eggs from curdling.) in an egg. Voila, you have cheese sauce. Now I still bake mine with some cubed cheeses and buttered bread crumbs on top, but hey, you can just stir and serve if ya want.

Cube some colby cheese, cook the macaroni to not quite done, mix in a casserole, add milk to about half, sprinkle some bread crumbs on top and bake, you can stir after about 20 minutes if you like, bake 10 more and eat. 350 for 30 minutes.
