because of escaping carbon dioxide leaves holes in the cheese.
2 sulfur gases make your eyes water.

1… Swiss cheese holes are a result of the bacteria fermenting the cheese. The bacteria release carbon dioxide.

The holes in Swiss Cheese is due to carbon dioxide released from the bacteria that makes the cheese. Its natural, though Limburger needs the ventilation. :=)
I believe Onions have an enzyme that make sulfuric acid that irritates your eyes.

1. It’s natural. It’s air pockets, formed during aging
2. Sulphuric acid is released when you cut them, attaching to the nearest water source (usually your eyes). Keep them in the refrigerator and slice on a board, next to the sink while your faucet is running
